Vegan Mofo 2010 – Day 22
This is one of the easiest meals that you’ll ever make but it’s tasty and wonderful as comfort food. In most cultures there’s a vegan dish that is part of the cultural heritage without people even realizing it. In South African culture one of these kinds of dishes is known as “peper boontjies” or pepper beans and dates back many years.
Ingredients :
1 small onion chopped into smallish cubes
400g of fresh green beans sliced and cut into pieces 1 to 1 ½ inches in length
200g of potatoes chopped into 1 inch cubes
2 or 3 teaspoons of white pepper
Water as required
Some vegetable oil

Heat the oil on a medium high heat and add the onions.
Cook for a few minutes until the onions start to turn transluscent.
Add the green beans and stir-fry for 3 or 4 minutes.
Add the potatoes and stir-fry for another 2 or 3 minutes.
Add the pepper and vegetable stock (or salt) and mix throughly.
Add enough water to cover the bottom of the pot and then cover and allow to simmer for a few minutes.
Turn the heat to medium and simmer until the potatoes are starting to disintegrate and the green beans are soft.
Add more white pepper to taste as this is the key ingredient in the taste of this dish.
Serve with some steamed veggies and a chickpea cutlet.
