Welcome to VeganMoFo everyone!! It’s been 4 years since I blogged during VeganMoFo and missed it terribly.
VeganMoFo has a guidelines this year and every day has a theme of topic. Today’s topic is “Rise and Shine! It’s MoFo time! Tell us about your breakfast.”
My breakfast was the delicious and simple Apple and Pineapple smoothie.
- 1 Golden Delicious apple (peeled if you want a smoother effect) or any apple of your choice
- 1 cup of frozen pineapple
- 2/3 cup of fat reduced coconut milk
- 1/2 T hemp protein power (sub any protein powder of your choice)
Blend in a high speed blender. Voila!!
You can do any number of variations. The original recipe used frozen pineapple and pineapple juice which you can use if you don’t like / don’t have coconut milk.
