Vegan Mofo 2010 – Day 10
Okay – I can’t take credit for this recipe and it ended up in an e-mail from a colleague and it had been forwarded a hundred times before that. So unfortunately I can’t give credit to the source. I can’t even really take credit for veganizing it because all I said was egg-replacer and mil-substitute….
First impressions you may think that sounds gross. I thought so too …. but the idea that a chocolate cake can be made in the microwave in 5 minutes is like a silver bullet.
Anyway here goes – but first a big warning …
The photo doesn’t look great but that’s mostly because of my non-existent photographic skills and the fact that the cake isn’t really much of a looker. BUT it does taste very good.
THIS RECIPE IS DANGEROUS !!
Chocolate cake. In a mug. In 5 minutes. It’s yum too.
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
Orgran egg replacer to the equivalent of one egg
3 tablespoons of rice milk (or your favourite choice of milk substitute)
3 tablespoons chocolate chips (optional – but why would you want to leave them out ??)
a small splash of vanilla extract
1 large coffee mug
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts (high).
The cake will rise over the top of the mug, but don’t be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
It may be too big for one so share with a friend if you’re feeling generous. I served with a nice helping of vegan cream…… DECADENT !!
